Protein-Packed Raw Raspberry Coconut Slice
You will love this raw, vegan, and dairy-free Raspberry Coconut Slice. It hits all the spots with the added bonus of extra protein, superfoods and healthy fats making the perfect, healthy treat!
INGREDIENTS
Serves 8-12
BASE LAYER:
1 cup dates
½ cup almonds
½ cup oats
¼ cup desiccated coconut
RASPBERRY FILLING:
¾ cup cashews

1 ½ cup frozen berries
1 - 2 tbs plant-based milk
3 tbsp sweetener of choice
CHOCOLATE TOPPING:
3 tbs coconut oil
2 tbs sweetener of choice
4-5 tbs cacao powder
METHOD:
PREP:
Prepare and soak nuts overnight in water
Line a 10 x 20 cm baking tray with baking paper
BASE:
Combine all base ingredients in a high-speed food processor until it resembles fine crumbs
Evenly spread the mixture across a baking tray and smooth out with a spatula.
RASPBERRY FILLING:
Combine all filling ingredients in a high-speed food processor.
Pour the mixture over the base ingredients using a spatula to spread it evenly.
Place the slice in the freezer to set for at least 30 minutes.
TOPPING
Prepare chocolate topping by placing all remaining ingredients in a saucepan over low heat until melted.
Remove from heat and cool slightly.
Once your slice is set, cut your slice into pieces and then drizzle with chocolate topping.
